It’s the perfect time of year for this Apple, Cranberry, Almond Cake! And it’s completely organic too! Although, you can make this recipe any time of year. It’s moist and loaded with apples and cranberries and a touch of almonds too.

This apple cake is light, fluffy, and super easy to make for those of us with busy lives. In addition, this recipe doesn’t call for any oil or butter outside of greasing the pan! And there’s no baking soda or baking powder, either.

Furthermore, you can even substitute the white flour with whole wheat as well. When it comes to the sugar I use, I’m very particular. That’s why I only use Florida Crystals Organic Raw Cane Sugars.

Florida Crystals use sun-sweetened cane sugar sustainably grown with sugar cane earth-friendly care! They know what begins on their farm, ends at our table. Once you try them, you won’t use anything else! For this recipe, I used two types, Florida Crystals Organic Powdered Raw Cane Sugar and Florida Crystals Organic Brown Raw Cane Sugar.

Bake This Cake For Someone You Love Including Yourself!

We love anything with apples in it, and I always enjoy baking for my husband. He loves the fresh goodness of homemade. More so, this Apple, Cranberry, Almond Cake Recipe comes together with just a few wholesome ingredients. It might seem like a lot of apples, but trust me, with the first bite, you’ll understand why.

Plus, the dried cranberries add a wonderful touch of seasonal goodness, and the slivered almonds top this cake recipes perfectly. Also, I think this cake recipe tastes amazing with confectioner’s sugar sprinkled ever so gently on top. Or, you can add whipped cream or ice cream on top too!

Apple, Cranberry, Almond Cake Recipe
Prep Time 25 minutes
Cook Time 1 hour
Total Time 1 hour 25 minutes

Ingredients

  • ½ Brown Sugar
  • 1 Cup Flour
  • 1 Cup Dried Cranberries
  • ½ Cup Slivered Almonds
  • 3 Large Apples Peeled and Cubed (Granny Smith Honey Crisp, Pink Lady, and Jonagold are all good options).
  • 3 Large Eggs
  • ¼ Teaspoon Kosher Salt
  • Unsalted butter, at room temperature, or oil for greasing the pan

Instructions

    1. Heat the oven to 350°F and butter the bottom (but not the
      sides) of an 8-inch springform pan.
    2. Combine the eggs, light brown sugar, and salt in the bowl of
      a stand mixer fitted with the whisk attachment.
    3. Start on low, then raise the speed to medium-high and beat
      for about 8 minutes. Make sure the mixture is pale tan in color and super
      fluffy.
    4. While that’s working, you can peel the apples then cut them
      into ½-inch pieces.
    5. Don’t worry if they are not perfectly cubed.
    6. Your apples should yield about 4 cups of apple pieces.
    7. When the egg-sugar mixture is done mixing, remove the bowl
      from the stand mixer and add the flour.
    8. Use a spatula to gently fold in the flour until it’s almost
      incorporated. Add the apples and cranberries and fold those in, too.
    9. Scrape the batter into the prepared pan then top with
      slivered almonds.
    10. Bake for about 1 hour or until the top is browned and a toothpick
      comes out completely clean.
    11. Cool in the pan for about 30 minutes then run a knife around
      the edge to loosen the cake and unhinge the outside.
    12. Serve the cake in big wedges, warm or at room temperature,
      with confectioners’ sugar dusted on top. I like to use a small strainer and tap the confectioners' sugar on top.
    13. You can add ice cream or any topping you love!
    14. Enjoy this delicious and easy masterpiece!
