Latkes, or potato pancakes, are delectable and delicious by themselves, but once paired with homemade applesauce, well, the skies open up, and the angels begin to sing!

According to Plated.com, “Latkes are fried potato pancakes traditionally served during Hanukkah—the 8-day Jewish holiday sometimes called the “Festival of Lights.” They are typically prepared by combining grated potatoes with eggs to form a batter, formed into small pancakes, and then fried in oil. If desired, applesauce and sour cream can be served alongside hot latkes.”

Growing up in New York City, eating Jewish food was integral to our food repertoire. I came to love the decadent flavors of foods like potato knish, pastrami sandwiches, matzo ball soup, and especially rugelach!  

Homemade Applesauce with Potato Latkes is truly one of the best comfort foods you will ever experience. I made them for dinner and didn’t miss eating meat at all. At the end of the meal, we felt satisfied and comforted, and our palettes were blissful!

Watching them fry is a visual experience, too. Waiting for these perfectly peeled potatoes to brown really makes your mouth water! 

Homemade Applesauce With Potato Latkes – A Positively Perfect Pair!

Homemade Applesauce With Potato Latkes

Ingredients

  • 6 large baking potatoes
  • 1 large onion
  • 2 large egg
  • 2 tbsp. all-purpose flour or matzoh meal
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. coarsely ground black pepper
  • 3/4 c. Vegetable oil for frying
  • Homemade Applesauce
  • 6 large Golden Delicious apples
  • 1/2 cup apple juice
  • 1 Teaspoon fresh cinnamon
  • 1 tsp. fresh lemon juice

Instructions

Homemade Applesauce: Cut apples into eighths. I prefer to peel and core my apples. You can
leave both if you wish.

In 3-quart saucepan, heat apples, apple cider
or juice, and fresh lemon juice to boiling over high heat.

Reduce heat to low; cover and simmer 15
minutes or until apples are very tender.

Makes about 2 cups. Cover and refrigerate.

Potato Latkes:

Peel and finely shred potatoes and onion into
a colander.

With hand, squeeze to press out as much liquid
as possible.

Place potato mixture in medium bowl; stir in
egg, flour, parsley, lemon juice, baking powder, salt, and pepper.

Preheat oven to 250 degrees F.

Heat 3 tablespoons vegetable oil in 12-inch
skillet over medium heat until hot but not smoking.

Drop potato mixture by scant 1/4 cups into a hot
skillet, cooking 5 latkes at a time.


With the back of a spoon, flatten each latke into a
3-inch round.

Cook latkes about 4 to 5 minutes until
undersides are golden.


Turn latkes and cook about 5 minutes longer
until the flip sides are golden brown and crisp.

Remove latkes to paper towels to drain and
keep warm on cookie sheet lined with paper towels in the oven.



Cinnamon is an important part of Homemade Apple Sauce. I used Saigon Cinnamon, which is my all-time go-to cinnamon. It has a clean, sweet, and rich aroma like no other cinnamon I’ve ever had!

I’ve made this recipe several times already, and we just can’t get enough of it. The applesauce is the perfect combination of sweet, warm, and savory. The Potato Latkes are crispy and perfectly fried!

When you are grating the potatoes, be sure to use a grater with large enough holes as you will want a long thicker potato consistency. You can use on a box grater or if you have a handheld grater that will work perfectly fine too!
