Eating light and easy during the warmer months is essential. I’m always looking for easy recipes that are delicious and healthy for you too. Here are three easy recipes that are perfect for the hot summer months and to ensure to stay hydrated too.
Dehydration is something many people don’t take seriously. But with summer almost here, it’s important to remember that you need to keep your body hydrated, especially when you’re outside in the heat. Dehydration can lead to headaches, fatigue, and dizziness, which 70% of the population will experience at some point in their lives. So to avoid letting dehydration ruin your summer fun, here are two simple recipes to keep you hydrated this summer.
1 – Fruit Kale Salad
Salads are one of the easiest, and tastiest, meals you can make. And not only are they yummy, but they’re extremely hydrating. This raw kale salad is packed with flavor and can help keep you hydrated.
Salad Ingredients:
- 5 cups kale, chopped
- Orange zest
- Pinch of salt
- 1 tbsp extra virgin olive oil
- 2 cups romaine lettuce, chopped
- 1 medium pomegranate (arils)
- 1/2 orange, peeled and diced
- 1/3 cups toasted almonds, sliced
Dressing Ingredients:
- 1/2 cup orange juice
- 1 tbsp extra virgin olive oil
- 1-inch piece fresh ginger
- 1/2 orange, peeled and diced
- Salt and pepper to taste
In a blender or food processor, combine ingredients for dressing and blend until smooth. In a large bowl, add the salad ingredients and mix well. And then simply pour the dressing, toss, and enjoy a yummy, hydrating salad.

Everyone loves a good popsicle. And with these coconut kiwi popsicles, you don’t have to worry about the added sugar and preservatives that can be found in store-bought popsicles. All you’ll need is a few simple ingredients and a popsicle mold.
Ingredients:
- 16.9 container of coconut water
- 8 slices of kiwi
- 4 tbsp coconut cream
- 1/2 cup chopped kiwi
Start by whisking together the coconut water and coconut cream. After it’s mixed, pour the coconut mixture into the popsicle molds, filling up about 3/4 of the way. Add the kiwi slices and chopped kiwi and then cover the molds. Stick a popsicle stick in the molds and freeze for at least two hours before enjoying!
One of the best things about these popsicles is that you can use any fruit you want – so, feel free to change it up to whatever you’re in the mood for.
