Shrimp Scampi - So Delicious You Make It Every Week!

Ingredients
- 2 Tablespoons olive oil
- 4 tablespoons butter
- 3-4 (or more) large garlic cloves, minced (or about 1 to 2 tablespoons minced garlic)
- 1 1/4 pounds (600 grams) large shrimp prawns, shelled with tails on or off
- Salt and fresh ground black pepper to taste
- 1/2 cup dry white wine or broth
- Salt and pepper to taste
- 1/2 teaspoon crushed red pepper flakes or to taste (optional)
- 1/3 teaspoon of either lemon juice or lemon peel
- 1 teaspoon chopped parsley
Instructions
Heat olive oil and 2 tablespoons of butter in a large pan or skillet. Then add the shrimp, season
with salt and pepper to taste and sauté for 1-2 minutes on one side and then flip. Add butter to the mix. Add garlic mixture and sauté until fragrant (about
2 minutes.)
Add the white wine and red pepper flakes (if using). Bring to a simmer for 1-2 minutes or until wine reduces by about half and the shrimp is cooked through (don't overcook the shrimp).
Add your choice of pasta to the mix and cook for about 3-4 minutes. Plate and enjoy.
I know you are going to love this recipe. Even though it’s a pasta dish, it still feels like a light meal. The scampi sauce is why – it’s fresh and airy even though it’s covered in garlic. The wonderful lemon flavor pops through, and the kick of white wine seals the deal!

Let me know if you have any questions about this recipe and bon appetit!
