OMG Popovers and Strawberry Butter – A Piece of Heaven in Your Mouth – a heavenly combination!
I am still reeling from the popover I just ate – OMG it was so darn good! How can something so simple and easy to make be so off the hook amazing? And the strawberry butter? Well….it was as if heaven deposited itself in my mouth. OK, so I have a flair for words…but seriously…it was so amazingly delicious. Here is how simple it was to create these, yes create for they are a masterpiece! :)
I read on the Barefoot Contessa’s Blog that, “There are three secrets to great popovers: Make sure the pan is hot before you pour in the batter, fill each section not more than half full and no peeking while they’re in the oven!” Well, I disobeyed all three rules and they still turned out wonderful. LOL
All you need is:
2 Cups of Flour
2 Eggs
1 Cup of Milk
1 teaspoon of Salt
Preheat oven to 450 degrees. You will bake them for 20 minutes on 450 and the lower oven to 350 degrees and bake for another 20 minutes.
Start out by loosening up your egg with a hand blender. Just whip them up a tad. Then add your flour, milk, and salt and blend again. Be careful not to over-blend.
Once your mixture is done, PAM your pan, I love my popover pan, they make the perfect popover! I think you can use a muffin pan too, not sure how they will look sorry.

And now for the strawberry butter!
All you need:
Butter
Strawberries
2 Tablespoons of Confectioner’s Sugar
2 Tablespoons of Strawberry Preserves
Blend these ingredients gently either by hand or with a hand mixer. Don’t overdo it. You can make the strawberry slices as small or as large as you like!
I like to place my finished product right back into the butter container. I will use this for everything from smearing on the top of a yummy English Muffin or anything I’m eating for breakfast. Make sure you chill it well before serving.
Look at the yumminess! I hope you enjoy them as much as we did. My hubby ate two! He said he would have had more, but he didn’t want to look piggish lol.
