If there one dish we love its Italian Peasant Dishes. This is one of our personal favorite pasta recipes for years now.

A Pasta Backstory

I was raised on Italian food and when I got married, my MIL taught me how delicious, easy and inexpensive peasant dishes were to make.

And that’s where they became a staple in our meal planning. Peasant dishes are the Italian equivalent of what one might call Peasant Food in English – In Italian, it is Cucina Povera, i.e. poor (or frugal) cooking.

Yes, they are inexpensive to make but don’t let that fool you – you will find they are served in high-end Italian restaurants all over and translated into costly menu items. 

Today, I’d like to show you how to create one of these peasant dishes that are perfect for any occasion and a real crowd-pleaser – even the kids love it! 

Yield: 4

Onion, Garlic, Eggs, and Pasta Recipe

Ingredients

  • 1 pound pasta
  • 6 – 8 large eggs beaten
  • 1 cup of olive oil
  • 4 tablespoon freshly grated Parmesan cheese
  • salt and pepper to taste
  • Parsley and red pepper to taste

Instructions

  1. Fry eggs, onions, garlic, and seasoning together
  2. break up the eggs while in the frying pan after they are cooked
  3. Cook pasta
  4. When pasta is almost done, drain well
  5. Put pasta in frying pan with eggs and toss for about a minute
  6. Put in a large bowl and plate

Be sure to drain the extra oil before adding it to your pasta. You can leave a little bit in for taste.

  2. This is a staple and an all time favorite dish at our house. It was my kids and grandkids first real ‘people’ food meal. I sometimes add pepperoni, ham or bacon to it.

  7. Hi Carla, lol yes it’s funny how little don’t like onions. I think it’s a texture thing. You can substitute the onions for a veggie too. We do that and add peas or carrots they are so good. Thanks much and have a great weekend!
