Low Carb Keto Almond Shortbread Cookies – Simply Delicious!
Whether you are on the Keto diet or not, these low carb Keto Almond Shortbread Cookies are simply delicious! Ever since I started the Keto Diet back in May,
I’ve been on the hunt for an easy to make low carb cookie to satisfy my cookie cravings, and I am thrilled to have discovered this recipe – with a bit of tweaking I found the perfect low carb cookie recipe!
The one key ingredient I used that makes these low carb Keto Almond Shortbread Cookies simply delicious is Steviva Blend Natural Sugar Substitute!
It’s truly a game-changer when it comes to sugar substitutes and tastes absolutely delicious too!
Everyone loves these cookies and they are completely guilt-free too! I think it’s the cream cheese in this cookie that makes it so creamy and yet crisp like shortbread should be!

Low Carb Keto Almond Shortbread Cookies – Simply Delicious!
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 stick (8 tablespoons) unsalted butter, at room temperature
- 1/2 cup Stevia Blend Sugar Substitute
- 2 ounces cream cheese, at room temperature
- 1/2 teaspoon almond extract
- 1 large egg
- 1/2 cup sliced almonds
Instructions
Mix together the almond and coconut flours in a small bowl.
Combine the butter and Stevia in a medium bowl and beat with an electric mixer until light and fluffy, 2 to 3 minutes.
Add the cream cheese and continue to beat until smooth, about 1 minute more.
Add the almond extract and egg and beat until combined.
Add the flour mixture and continue beating until just combined and smooth.
Gently fold in the almonds.
Place the mixture onto a piece of parchment or wax paper and, using the paper, mold the dough into a log.
Wrap the log in plastic wrap and refrigerate until firm, at least 1 hour.
Position an oven rack in the center of the oven and preheat to 350 degrees F.
Line a baking sheet with parchment.
Slice the dough into 1/2-inch-thick slices and place on the prepared baking sheet.
Bake until the edges are golden brown, 18 to 20 minutes. Let cool before serving; the cookies will firm up as they cool.

It’s so easy to make these delicious low carb Keto Almond Shortbread Cookies. Once you mix your ingredients all you do is make a log roll and refrigerate for one hour.
After the dough is chilled, just slice into 1/2 inch pieces and places on a baking sheet lined with parchment paper. Easy peasy!

Sounds fantastic! I will make them this weekend! I have everything on hand except the coconut flour. Already added to my shopping list. Tomorrow is errand day and we have a regional market called Sprouts that carries these items in bulk, so you can purchase what you need and not have to commit to a 5 or 10 pound bag of something. And they are a lot cheaper than Whole Foods. Think of an upscale Trader Joe’s with a proper deli counter and proper butcher. Long story, my ex hubby is going to his brothers for Christmas Eve in Los Osos (a 3 hour drive north), and will be returning sometime on Christmas Day afternoon. We will be having dinner together and he wants meat for dinner as his brother is doing a California version of The Feast of Seven Fishes – so he will have had enough seafood . . . I will get some New York’s or Filet Mignon and sneak in a few shrimp too if they look good and will grill up with some fresh veggies! These cookies will be the perfect end to the meal. Oh wow! That dinner sounds incredible – The Feast of Seven Fishes! I never heard of that before. We do a fish thing on Christmas Eve but not that. What fun! Sprouts sounds wonderful! We have a store called Wegmans that sounds similar. Oh yes, the Almond and Coconut flour are everything in this recipe. I never thought I would be a fan but boy, was I wrong.
