Vegetable Quiche Recipe
Ingredients
- 2 prepared 9-inch single pie crust
- 4 eggs
- 1 ½ cups half and half
- salt and 1 pepper to taste
- 1 tsp. minced garlic
- ½ Onion powder
- ½ tsp. garlic powder
- 1 (10 ounce) bag of frozen (or fresh) spinach
- 1/2 tsp. Italian seasoning
- 1.(8 ounce) package sliced fresh mushrooms
- 1 medium red or yellow onion, chopped
- 4 ounces of asiago cheese
- 8 ounces parmesan cheese
- 4 tbs. Butter
- 4 tbs. Olive Oil
Instructions
First, you will want to prepare by chopping onions, mushrooms, and spinach. If you get the cut
spinach, then you can skip that step.
Preheat oven to 425 degrees F (200 degrees C).
In a frying pan, melt butter add onion and mushroom. Cook for about 10 mins or until golden
brown.
Fit pie crust into a 9-inch pie dish. I prefer using a spring form pan - but do as you like. Be
sure to coat the inside of the pan with cooking spray. Using a prepared pie crust
is perfectly awesome for a quiche.
Gently combine spinach, mushrooms, onion, and cheese in a separate bowl. Spread spinach,
onion, cheese, and mushroom mixture in the prepared pie dish.
Combine half and half with the 4 eggs and beat until fluffy. Pour this mixture evenly over the
filling.
Place quiche on a baking sheet. I always place an old cookie sheet under the pan as some liquid
might seep through, especially if you use a spring-form pan.
Add the 2nd pie crust over the top of the quiche. Poke a few holes in the top.
Bake in a preheated oven for 10 mins at 420 degrees and then drop the temperature down to
about 375 degrees. Cool at 375 degrees until the quiche is lightly puffed and
browned for about 30 minutes.
A toothpick inserted into the center of the filling should come out clean.
