Almond, Apple, And Raisin Chicken Salad
A gourmet meal filled with flavors that will make any picky eater happy! I’m always hunting around in search of a meal that easy to make, and of course, tastes delicious.
This chicken salad is my go-to recipe. It’s packed with flavor and everyone that eats it loves it. I love making batches and eating it for lunch the next day. It’s great for dinner too!
The roasted chicken adds a level of flavor to this chicken salad like no other. The best part is, if you don’t feel like roasting the chicken, you can get a rotisserie chicken at your local supermarket and the rest is easy peasy! Plus, the possibilities are unlimited with this recipe. You can add any fruits, nuts, or spices you like!
If you are like me, you don’t always feel like cooking a meal – you want something easy for a change but yet tastes so darn good and is healthy eating too. You can substitute the mayo for a light blend and use low-carb bread – that’s what I do when I feel like sticking to my diet that day.
Any way you slice it, this chicken salad is a winner. I’m a huge fan of fruit in my recipes so this is right up my alley. It’s not overly fruity – just enough to add a gentle touch of sweetness which balances this chicken salad out perfectly.
Almond, Apple, And Raisin Chicken Salad
Ingredients
- Baked Chicken Breasts – you can use boneless and skinless
- 1 Teaspoon of Dijon Mustard
- 1 Teaspoon of Balsamic Vinegar
- 1 Peeled Medium sized Apple – I like a sweeter apple but you can use any you prefer
- ¼ Cup of Raisins – I prefer Sun-Maid Mixed Jumbo Raisins but you can use any you prefer
- ¼ cup of gently chopped slivered almonds – you can roast them as well for more yumminess
- Salt and pepper to taste
- Garnish if you please with parsley
Instructions
Cut the chicken in cubes
Place chicken in bowl
Add mayo, balsamic and gently toss.
Add the chopped apple, raisins and season.
Continue to toss until blended well.
You can refrigerate for up to three days.

I roasted my chicken breasts with Italian seasoning first!
Then, I removed the skin – much healthier that way but you don’t have to. The choice is yours!
Adding the apple really gives this chicken salad a nice balance.
I like to chop the almonds a tad more which add a nice nutty flavor and some crunch!
I also chop the raisins in half too – since the jumbo raisins are already large. I love using the jumbo raisins because they are much plumper and much juicier. Adding a touch of Balsamic vinegar really makes a huge difference and adds some balance to the mix.
Same with the Dijon mustard – although, any mustard will do that you have handy.
Seasoned and ready to go!
This chicken salad is absolutely the best! Juicy, flavorful, and makes a great lunch or dinner meal!
I love using low-carb bread. You can toast it too and it tastes just as delicious as regular bread.

List of ingredients does not include mayo but in the directions, you say to add it. How much mayo to add?
